Default mashed potatoes are boring unless augmented with other things. FWIW, I've found that sweet potatoes (or maybe yams? labelled as the former but orange not yellow) do a lot better. Someone brought some amazing mashed sweet potatoes (they had thyme in them and I'm not sure what else) to my seder last spring and that was a big hit.
