One of our go-to recipes has become Artichoke Tarts: http://www.weightwatchers.com/food/rcp/RecipePage.aspx?recipeId=82001 It's a Weight Watchers recipe but can also be made without all the low-fat stuff (obviously, I guess), and it's excellent and fairly easy to pull together and to make a larger recipe of it.
Then there are desserts... I could go on and on about desserts, but I think I'll sit around and drool over your chocolate rum cheesecake instead--that sounds incredible.
