Generally, people are looking for dates, names, and places. There's definitely a risk of the latter two being translated when they shouldn't be. But a lot of the documents one deals with are formulaic enough that it could be a starting point. For example, Polish vital records usually start out with "it happened in xxx on ddmmyy that yyy said..."
